Cauliflower Pizza Crust
Thank goodness for Pinterest. Am I right? Before Pinterest, I would have never of thought to use Cauliflower for a pizza crust. Actually, if I’m going to be honest here I would not have tried many of the recipes that have become our family favourites, or even created my own out of inspiration from what I have seen. Cauliflower Pizza Crust is a tricky thing, at least if you’re expecting pizza crust like ability. I have probably tried 3-4 different recipes, but they all resulted in a crumbly mess that would just stick to the pan. Then I found a simple Cauliflower Pizza Crust recipe from Greatist.com, added a few flavourings and came up with the following:
Cauliflower Pizza Crust
Ingredients
- 1/2 head of one large cauliflower
- 1/2 cup of plain greek yogurt
- 1 egg
- 2-3 tsps garlic powder
- 1 tbsp parsely/basil/italian seasoning (whatever you have on hand)
- sea salt and pepper to taste
Method
- Preheat oven to 400 degrees.
- Break off your cauliflower in pieces and place in a blender/food processor. (I have Ninja blender and it works awesome for this.) Pulse until you have what appears as cauliflower “rice”, if it turnscreamy – you have gone too far.
- Transfer cauliflower to a bowl and stir in yogurt, egg and the rest of the ingredients. Mix throughly. *I use sea salt because it is the least processed salt, but regular table salt will work fine as well.
- Spread the cauliflower mixture on a greased baking sheet, about 1/2 – 3/4 inch thick. Place in oven and bake for 30-35 minutes, until it’s nice and firm. *I used a pizza stone, and because pizza stones absorb as much moisture as possible it really helps the crust from falling apart. That being said, I have made this recipe on a cookie sheet and it was fine.
- Top with pizza sauce and desired toppings and bake another five minutes, or until cheese has melted.
This time I topped it with pizza sauce, spinach, chicken and small amount of cheese. The nice thing about this recipe is that you can go in whichever direction you would like. I have made it with BBQ sauce, chicken, mozza and onions before – it was delicious.
Another idea would be to add red pepper flakes to the crust and do a thai chicken style pizza. The possibilities are endless.

hmm I have not heard of this before. Can you still pick it up like a regular pizza slice?
With this one you can, but it has to cook a little longer. Everytime I make it it’s different. Somtimes 35 minutes, sometimes 40.
This looks amazing! I’m seeing cauliflower being used a lot now because of the Wheat Belly diet. Will have to try.

Is the cauliflower taste really overpowering? My MIL has been doing paleo/gluten free and has been using ground chicken as a crust. I’ll share this one with her! I love cauliflower but one of my daughters doesn’t. Hence the question about the flavour!

Hmmm…I might have to try this. Although, cauliflower never lasts long in our house, as it’s one of our favorite foods.
This sounds so good but I’m not sure I can get my kids to try this. I, however, am willing to try.
Did you need to dry the cauliflower before putting it in the crust? I have seen some recipes where they cook the cauliflower after ricing it and then dry it in a towel. Do you just mix it with the yogurt uncooked?

Yes! I forgot to put that in there. Take a paper towel and squeeze it to take the excess moisture. It’s always different every time I make it, I made this last week and it was so humid in my house that I had to even let it sit in a colander for an hour to dry out.
Do you cook the cauliflower prior to processing it or adding in the other ingredients?
No I keep it raw 🙂 Keeps it so much easier.

Hi Randa, We just finished our pizza. It was delicious! We weren’t able to pick up the slices though. I didn’t drain the cauliflower because I didn’t read that post til after it was in the oven, maybe that was it. Also, do u grease your pizza stone? I did not and the pizza stuck:( Will definitely try again but wanted to hear your thoughts. Thank you. -Sarah

Yes I find that when I don’t squeeze out the water with paper towel, it crumbles. I give it a mini spray with nonstick spray before I toss it in the oven as well:) Some days (it really depends on the weather here where I live) I leave it in for a bit longer too.

Do you not have to microwave the cauliflower after blending it?
I don’t on this particular recipe. I have in the past though.
How many cups (riced) is 1/2 head of cauliflower? Ours are all different sizes.
I’m not sure, I have never measured. I usually buy a big head of cauliflower and just use half of that. I think if you look at it and see that it can cover your pizza pan, you’re good 🙂
Can you make the “dough” ahead and store it in the fridge for a few days before you bake it into a crust?
I have never done it, but I don’t see why not. As long as the greek yogurt isn’t past it’s expiry by then 😉

Do you not cook/steam the cauliflower 1st? All of the other recipes I have found like this call for
Cooking and draining the cauliflower first, but this looks a lot easier!
I don’t (I’m lazy haha). I made it two nights ago again and I really drained the cauliflower (squeezed it over and over with paper towel). Try to get all the moisture you can out. My house is really humid so I also baked it for another 10 minutes. Turned out perfect.
Sounds delicious, but maybe a bit finicky for me. There’s a local pizza/pasta restaurant near me that makes a gourmet vegetarian pizza with cauliflower as one of the toppings, it’s a little weird, but tasty too.

Yum! Cauliflower pizza crust is something I make quite often as I follow a keto diet. I haven’t made it with greek yogurt though, I will have to give it a try!
Hi! I want to make this on Friday but I have a question…I am a bit confused as to when you “squeeze the excess water out of cauliflower with a paper towel”. Do you do this when it is still whole or after you have turned it into “rice”?

I do it raw. It “steams” in the oven. You may have to play with baking times. There are days where I can follow the recipe and other days where I need to leave it in another ten minutes. It depends on wet the cauliflower is.
