Roasted Chicken and Artichokes
Where I live the fall season is very rainy (I haven’t seen the sun in over a month) and the wet chill goes straight to my bones. It’s okay though because that just means I get to fire up my oven and make comfort food like this recipe for roasted chicken and artichokes.
Other than spinach and artichoke dip, I have never cooked with artichokes before so I was a little nervous about tossing some ingredients together and crossing my fingers. That being said, sometimes that’s how the best recipes are created.
I used my new CorningWare set for this dish and I love them. The blue color really adds a pop to the table, in fact the whole set I have brings the party to a dinner party. I think they’re perfect for Cinco De Mayo and I love them even more because it’s oven safe, microwave safe and (most importantly) dishwasher safe.
Roasted Chicken and Artichokes Recipe
The beauty thing about this roasted chicken and artichokes recipe is that it’s very flexible. I used whatever vegetables in my fridge that were ready to go bad any day now and it helped me cut down on waste (my vegetable crisper is where my money goes to die). I’m pleased to say it all worked out.
Roasted Chicken and Artichokes
Ingredients
- 3 chicken breasts
- 1 jar marinated artichoke hearts
- 1 red onion cut in 8ths
- 1 red bell pepper quartered and then sliced in half
- 1 cup baby carrots
- 1 bunch asparagus ends trimmed
- 2 tsps minced garlic
- 1 tsp sea salt
Instructions
- 5 hours before the dish goes in the oven add the chicken breasts, artichoke hearts (with juice), onion and bell pepper into a bowl. Marinate for a few hours.
- Pre-heat the oven to 375F.
- Strain the artichoke marinade.
- Spray a baking pan with nonstick spray. Place the chicken breasts on the pan and arrange the vegetables around the chicken. Season with salt, pepper, and garlic.
- Bake for 45-50 minutes or until the chicken breasts are done.
