How to Make Chicken Wild Rice Soup Healthy
Many wild rice soups are high in saturated fat, carbs, and calories. To make chicken wild rice soup healthy, omit the heavy cream and make it broth based for soup that’s nourishing but still comforting.
Plus, making this healthy wild rice is so easy!
Saute Vegetables
In a large pot, heat the olive oil over medium heat and add the onion, carrots, and celery. Saute for 2-3 minutes, until tender.
Cooking your vegetables before adding the broth is key to making your healthy chicken and wild rice soup broth super flavorful.
Add Seasoning
Add the garlic, sage, parsley, paprika, and pepper and stir until fragrant. It should take another minute or so.
To mince the sage, roll the herbs together and slice through with your knife. Do this a few times.

Pour in the chicken broth, wild rice, and chopped chicken. Bring to a boil, cover, and simmer on low for 40 minutes, until chicken is cooked through and rice is tender.
Serve and Enjoy
Serve warm, seasoning with salt and pepper to taste.
This soup is perfect for picky eaters! I don’t want to say it’s bland (totally wrong choice of words), but it’s great for young kids who don’t like “too much” going on — you know?
My sick husband said it hit the spot, and because I love hot sauce in soup, I added a dash of that to my bowl with a little extra salt and pepper.

One of my favorite comfort dishes! Since i became vegan i haven’t made any yet. I’m sure i can substitute the chicken for a vegan alternative.
I’m surprised to see that there are no mushrooms in here! I’m also not a fan of creamy soups – because I can’t eat flour and cream. I’ve also just learned I’m allergic to mushrooms so this just happens to be the perfect soup for me!
