Curry Chicken Salad Sandwiches Recipe

Curry Chicken Salad Sandwiches
I do not like chicken salad sandwiches, I never have. However, this month my friends at Chicken Farmers of Canada challenged me to make a lunch recipe using chicken and I was stumped.
Yes, I could have made a salad or chicken spring rolls but I wanted something simple and that didn’t require utensils.
The idea of a curry chicken salad sandwich came up when I was debating chicken salad but knew I needed to change it up to make it edible for my tastes.
I was inspired by a curry apple dip I made years ago for a part that had curry and raisins in it. I remember being surprised with the combination and wanted to use those flavors for this simple lunch idea.
What Chicken to Use for Sandwiches
I always cook with chicken breasts, they’re my favorite cut of poultry and they’re easy to deal with.
You could also use chopped up boneless chicken thighs for a more tender meat and a more economical option.

Lower Carb Option:
I served the leftovers over a bagged kale caesar salad and it was amazing. I highly recommend this version as well.
You could also serve this over a spring mix or whatever lettuce you have on hand for a quick salad for your lunch or no fuss dinner.

I added red peppers, matchstick carrots, and raisins to this curried chicken salad but here are some other options to consider:
- Celery
- Walnuts
- Cashews
- Grapes
- Radish
- Avocado
- Apple

Curry Chicken Salad Sandwiches
Equipment
Ingredients
- 3 kaiser roll or bread of choice
- 2 lettuce leaves
- 1/2 cup mayonaise
- 1 tblsp curry powder
- 1/2 teaspoon apple cider vinegar
- 1/4 teaspoon salt
- 2 chicken breasts cooked and diced
- 1/2 red pepper diced
- 1/4 cup matchstick carrots
- 1/4 cup raisins
Instructions
- In a mixing bowl combine the mayo, curry, and apple cider vinegar. Then add everything but the lettuce and buns.
- Arrange the curry chicken salad on the buns and top with a lettuce leaf.
I’m not seeing the actual recipe for the curry chicken salad. All I see is a pie recipe? Would love to make the chicken salad though!
