Shredded Chicken Tacos

If you're looking for a light and healthy recipe for homemade tacos, give these shredded chicken tacos a try. The subtle flavor of the citrus basil vinaigrette adds a delicious summery twist.

- Chicken Breasts - Kumquats - Basil - Purple Cabbage - Olive Oil - Kumquat Zest

Ingredients

Add olive oil to Instant Pot, layer chicken breasts with basil leaves and sliced kumquats. Pressure cook for 15 minutes.

Pull the chicken apart with two forks. Top with basil leaves. Bake for 15-20 minutes, enough to crisp up the chicken.

Blend olive oil, kumquats, zest, and basil leaves until smooth. Taste and adjust to the desired sweet/sour levels.

Pour the citrus basil vinaigrette over the chicken and mix. Add the chicken and purple cabbage to your tacos.
