Chocolate Coconut Balls are a fun twist on the classic Canadian treat. Make bite-sized versions of Nanaimo bars with this easy recipe!
- Graham Cracker Crumbs - Grated Coconut - Pecans - Butter - Cocoa Powder
Filling - Powdered Sugar - Butter - Cream - Vanilla Pudding Mix
Chocolate Coating - Semi-sweet Chocolate - Butter
In a large bowl add the graham cracker crumbs, coconut, pecans, melted butter, and cocoa powder. Mix and set aside.
Mix the filling ingredients and roll in a ball, about 3/4″. Sprinkle with chocolate coconut mixture and roll until covered.
Place on parchment paper, and freeze for 30 minutes. Melt the semi-sweet chocolate and butter. Stir until smooth and glossy.
Roll the balls in the melted chocolate. Top with coconut mixture. Let stand a few hours until chocolate is set or freeze to speed it up.
