I’m not a huge potato fan.
Yes, I said it. I enjoy the odd mashed potatoes and gravy (once or twice a year) and I really like twice baked potatoes but I can do without potatoes 99% of the time.
However, these Blue Bayou Scalloped Potatoes are magic.
I will never forget when I first tried them, I didn’t even order them, my husband did. After his first bite, he went on and on about how delicious they were and was adamant that I had to try it.
Turns out they were the best scalloped potatoes recipe I have ever had.

Was it because I was at Blue Bayou Disneyland? Possibly.
Was it the magical ambiance of the Blue Bayou restaurant nestled within Pirates of the Carribean, where shooting stars raced overhead and fireflies danced in the distance? Could have been.
The last day at Disneyland, I beelined for City Hall and asked for the recipe. I waited a few months, but I finally made it and OH-EM-GEE.

Best Ever Scalloped Potatoes
This is the best recipe ever when it comes to scalloped potatoes. The recipe is direct for Disneyland’s amazing restaurant, Blue Bayou. You’re going to love them, and so is your family. Trust me, this is going to be your new “secret recipe”. The cream sauce has a hint of spice (thanks to the jalapeno juice) and is the little bit of parmesan cheese adds that something extra to make these cheesy scalloped potatoes memorable.

Blue Bayou Scalloped Potatoes
Ingredients
- 2 1/3 cups heavy whipping cream
- 1/2 tsp thyme
- 1 tbsp garlic minced
- 1 tbsp jalapeno chopped
- 1 tsp chicken base
- 1 tbsp jalapeno juice I used Pickled Jalapeno juice
- 1/2 tsp salt
- 1/8 tsp white pepper
- 6 russet potatoes peeled and thinly sliced
- 1 cup onions thinly sliced
- 1/4 cup parmesan
Instructions
Preheat oven to 350º.
- Whisk together all the ingredients except for the potatoes, onions, and parmesan cheese.
- Place the sliced potatoes and onions in the bowl and mix well.
- Pour into a 2x12 inch pan. Press down and ensure the potato mixture is even.
- Cover the potatoes with foil.
- Bake for 1 1/2 hours. Top with parmesan cheese.

This sounds amazing! For the jalapenos, did you use the pickled jalapenos as well as the pickled jalapeno juice or an unpickled jalapeno?
I used the pickled since I had it on hand, but you could do either or.

You had us put the potatoes and onions in, and nothing else. Please clarify the recipe. Do you bake it some before adding what was mixed?Donyou layer the potatoes and mixture? This is not complete.

Tara P and Janice Wood- I’ve never made this before but from reading the instructions and ingredients but here’s what I got from it. I’m going to say that you whisk all the wet, soupy and spicy ingredients in a BOWL except for the potatoes, onions and parmesan cheese. Then add the potatoes, and onions to the wet ingredient bowl and mix until everything is wet and now equally seasoned. Pour that into your 2X12″ pan ensuring the potatoes and onions are in a somewhat flat and even layer. Cover with foil. Bake. Add cheese before serving. Ding! ding! ding! Dinner time! (Hope that helps) Sounds tasty. Think I’ll give it a whirl… 🙂
Does the Blue Bayou potato recipe HAVE to be baked in the 2×12 pan? Could I use a 9×13 or smaller?
I’ve had these potatoes at the Blue Bayou the first time I was there, and I the second time I was there I ordered the main dish based off of this being the side dish, this receipt is that good.
