Garlic Balsamic Roasted Asparagus
This recipe for oven roasted asparagus with garlic and balsamic is a common sight on our kitchen table. We make it almost every Friday night as a side dish for our grilled steaks.
Roasted Asparagus
When it comes to vegetables, I’m a picky eater. There are really only a few veggies I’ll eat (not including lettuce/kale/spinach):
- Broccoli
- Cauliflower
- Bell peppers
- Carrots
- Beets
- Zucchini (only in baking or zoodle form)
- Asparagus
Yeah, I know, I’m basically a five-year-old kid. I’ll eat a few others, but only if they’re cooked a certain way or if they soaked in a marinade.
I’ve always loved Asparagus, it’s probably the vegetable we cook the most but it came to my attention that I haven’t featured asparagus all that often here on the blog (aside from this healthy hollandaise sauce).
Asparagus is one of those vegetables that taste delicious bare. A lot of the time, we just add some olive oil and that’s it. However, if I want a little something extra, some zest to dance along my taste buds then I add garlic and balsamic vinegar.
Roasted Garlic Balsamic Asparagus
I have mentioned this many times before on The Bewitchin’ Kitchen, but Friday night tends to be steak night at our house, and it’s this oven roasted asparagus recipe is a common side dish. We like to have steak, asparagus, salad and another side dish, whether that’s a three pepper salad or grilled potatoes.
