Mediterranean Chicken Quinoa Salad

Mediterranean Chicken Quinoa Salad
There is nothing I like better than a bowl. Whether it’s a salad bowl or a chicken quinoa bowl, it’s just where my heart is when it comes to an easy summer lunch or dinner.
They’re simply perfect. Either arrange the ingredients fresh or toss it all and let it marinate for a day or two. Then your lunch and dinner are ready. They make the perfect meal prep recipes.

Chicken Quinoa Salad Ingredients
What I love about this recipe is that the ingredients are accessible at most grocery stores.
There is nothing that annoys me more than having to run store to store just find everything for one dish.
Ingredients needed for a Mediterranean quinoa salad:
- Canadian Chicken (more on that below)
- Balsamic Vinegar
- Greek seasoning (although an Italian blend works well too)
- Quinoa
- Bell Peppers
- Marinated sundried tomatoes (I like the julienned ones)
- Kale
- Olive oil
- Apple Cider Vinegar
- Lemon
- Garlic
- Oregano
- Dijon Mustard
- Salt and Pepper
You could also use this greek vinaigrette recipe too, it’s a tried and true homemade salad dressing that has great reviews.
Optional add ins:
- Olives
- Feta Cheese
- Cucumbers
- Tomatoes

Meal Prep Tips
If you’re making this Mediterranean chicken quinoa salad for meal prep, there are two ways you can do it.
1. Cook the chicken and quinoa beforehand and assemble the bowl fresh. Before serving.
2. Mix it all together at the beginning of the week and store it in your meal prep containers (there are four servings). This is my personal favorite way to handle meal prep with this quinoa salad because it marinates over time and becomes more flavorful.
You can serve this warm or cold, but I prefer it as a cold salad.

Mediterranean Chicken Quinoa Salad
Equipment

Ingredients
For the chicken
- 1 lb chicken breasts see below
- 2 tbsps balsamic vinegar
- 1 tbsp greek seasoning or italian
Salad Ingredients
- 1 cup cooked quinoa
- 1 red bell pepper diced
- 1 yellow bell pepper diced
- 1 cup kale torn into small pieces
- 1/2 cup sundried tomatoes rinsed if marinated in oil
- 1/2 red onion diced
Vinaigrette
- 1/2 cup olive oil
- 1/3 cup apple cider vinegar
- 1 tbsp lemon juice fresh
- 1 tsp lemon zest
- 1 garlic clove minced
- 1 tsp oregano
- 1 tsp dijon mustard
- salt and pepper to taste
Instructions
- Preheat oven to 400F
- Line a baking sheet with parchment paper and lay out the chicken on top. Drizzle with the balsamic vinegar and greek or italian seasoning. Bake for 35-40 minutes or until done.
- While the chicken is cooling add the quinoa, bell peppers, kale, and sundried tomatoes to a large salad bowl.
- In a small bowl whisk together the vinaigrette ingredients. Pour over the quinoa. Toss together.
- Slice the chicken and add to the salad. Toss well to coat.
