Strawberry Rhubarb Parfaits
Another strawberry and rhubarb recipe, but this time it’s for Strawberry Rhubarb Parfaits. This recipe is super easy, it’s no bake and it’s delicious (the most important part)!

A few weeks ago, I posted how I cooked up a batch of strawberry rhubarb pie filling and turned that one recipe into three. There’s the pie filling, strawberry rhubarb hand pies and now these Strawberry Rhubarb Parfaits.
Strawberry rhubarb is my favorite style of dessert. It’s the sweet and sour mix that speaks to my heart. Before these three recipes, I haven’t cooked with rhubarb since I baked these whole wheat rhubarb muffins (forgive the photos, I need to update it one of these days) but my friend Tonya dropped some off and I was so excited to get some recipes going.
There really isn’t much of a recipe to talk about with this recipe. You simply layer greek yogurt with the strawberry rhubarb pie filling and top with whipped cream. I used Greek Gods honey greek yogurt, I buy it from Costco and it’s my favorite. Maybe it’s just me, but I find that it tastes like cheesecake but with more protein and a little less sugar (but we’re not counting sugar with this recipe – haha).
Strawberry Rhubarb Parfaits
Either layer it in dessert shooters, large shot glasses or stemless wine glasses. I loved serving this dessert in a wider shot glass, the greek yogurt I used is very filling so a little goes a long way. Plus this way, you can serve more people! Strawberry Rhubarb Parfaits
Ingredients
- 1 cup greek yogurt I used Greek Gods Honey
- 1/2 cup strawberry rhubarb pie filling
- Optional:
- Whipped cream and strawberries for toppings.
Instructions
- Simply layer the greek yogurt and strawberry rhubarb pie filling.
- Top with whipped cream and chopped strawberries.
