One of my favorite recipes on The Bewitchin’ Kitchen is the strawberry rhubarb pie filling recipe. It’s a really easy recipe to throw together and I have made it 3 times in the last month.

This recipe uses the above recipe, but if you’re really short on time you can use canned strawberry rhubarb filling and go from there.
You don’t even have to put a whipped cream topping on if you don’t want, they’re good just like this. For presentation’s sake (and the love I have for my canned coconut whip cream) I added some. Seriously though, I just wanted an excuse to stop eating the coconut whip out of the can.
Strawberry Rhubarb Recipes
Since strawberry rhubarb is my husband’s favorite summer dessert, and it may be mine (although this key lime pie recipe is fighting for first place) I wanted to switch up the strawberry rhubarb recipes. Here are a few you may like.
A reader told me she used the filling over her pancakes and it was really good. I haven’t tried it yet, but it’s on my to-try list! I’ve also put a little bit in oatmeal and that was super yummy as well.

Strawberry Rhubarb Mini Pies
If you don’t like spending hours in the kitchen, you’re going to love this recipe.
For these strawberry rhubarb tarts I used a homemade pie filling, but if you don’t have any on hand then use the canned variety, just bake it with the tarts instead of scooping it in afterward.
PS: I’m aware that it’s odd to have chocolate chunks with strawberry rhubarb, but it surprisingly worked. I originally used them for the photos to bring something to the tarts, but it tasted pretty good. This is the dairy-free chocolate I bought.
Strawberry Rhubarb Tarts
Ingredients
- 12 mini tart shells
- 1 cup strawberry rhubarb pie filling
- .75 cup Whipped Cream
- Optional toppings: graham cracker crumbs dark chocolate
Instructions
- Preheat the oven to 375.
- On a baking tray, lay out the mini tart shells. Bake for 12 minutes.
- While the shells are baking, heat up the strawberry rhubarb pie filling (if it's cold). Another option would be to add it to the tarts while cold and bake.
- Pull out the shells, add the pie filling, and add whipped cream and desired toppings.
