Mac and Cheese Cups Ingredients

Chop cauliflower, red pepper, and carrots and roast for 35 minutes. Let the vegetables cool, then puree in a blender along with chicken broth. Meanwhile cook the macaroni.

Melt butter, add onions and cook until translucent, then stir in garlic, flour, and broth. Let it bubble, then stir in the cheese until it's melted. Add the pureed veggies and remaining ingredients.

Mix the sauce with the cooked macaroni, then spoon the mixture into a muffin tin and sprinkle with panko crumbs and cheddar. Bake until the cheese bubbles and is golden.
