Whisk eggs with buttermilk and vanilla extract. Mix dry ingredients and add to the wet mixture. A few lumps are ok, so don’t overmix.
Heat butter and pour ¼ cup batter into the pan. Cook until bubbles form on the surface and flip. Cook for another minute.
Add your preferred toppings and serve warm!
