Chocolate Chip Cheesecake cookies is the perfect fusion of cookies and cheesecake. They are cheesecake creamy on the inside and chewy cookie on the outside.
3/4cupbutterunsalted and softened to room temperature
2/3cupsugarbrown
1egglarge
1.5 tspvanillaextract
2.25cupsflourall-purpose
1tspbaking soda
1/2tspsalt
1.5cupchocolate chipssemi-sweet
Instructions
Preheat oven to 350F
Mix the ingredients for the cheesecake filling in a small bowl. Set Aside
Place the softened butter and both sugars in a large bowl. Beat them with an electric mixer until light and airy.
Add the egg and mix to combine. Stir in vanilla and mix again.
Add flour, baking soda and salt. Use a spatula to integrate ingredients. The result will be a dense dough. Incorporate chocolate chips.
Line baking sheets with parchment paper.
Scoop a tablespoon of cookie dough onto the parchment paper. Repeat the process until you evenly fill your cookie sheet, leaving space between the cookies for them to flatten in the oven.
Using the back of another tablespoon, make an indention in the cookie dough, so that there is a little pocket for the cheesecake filling to go.
Add about 1 teaspoon of filing to each cookie.
Take another tablespoon of cookie dough. flatten it slightly and cover the cheesecake filling. Gently press the edges of the cookies to seal them.
(TIP: Refrigerate the cookies for 1 hour for best baking results. )
Bake the cookies for 12-14 minutes or until the edges are golden brown. The top will be soft but it will harden as it cools.
